THE ever-growing boom in organic food production takes a major step forward in Yorkshire tomorrow (September 6) with the opening of a new corn mill which will grind organic wheat from local farmers using brand-new methods to achieve the sort of flour produced for centuries before industrial-scale milling was introduced.

Yorkshire Organic Millers (YUM), a company which has already built a small but enthusiastic market for its flours sold at events like farmers' markets, will open its brand new mill at Hill Top Farm, Spaunton, near York.
To celebrate the event, the owners are inviting bakers, food retailers and interested members of the general public along to see the mills in action and taste some of the breads and even beer food items made from its grilled corns.
The company mission statement says that it will produce flour only from locally grown wheat, will sell it through locally owned shops, and is already working on plans to provide the electrical power they need from "green" sources.
